SEASON: Late May through July.

LOOK FOR: Firm, rough, reddish brown, rubbery skinned fruit the size of a large strawberry, with no indication of decay at the stem end. Avoid blemished fruit.

TO STORE: Refrigerate lychees; use them within 1 to 2 days.

TO PREPARE: Beginning at the stem, with your thumb, pull off the skin as you would an orange skin; remove the pit for eating lychees out of hand; or use fruit in salads or in Oriental stir fry dishes.
